Janet cooks without pretense. Good food does not need to be complicated. Neither does she feel terribly bound by convention, opportunistically and creatively combining the best ingredients available to her pantry into deeply satisfying meals. Her fun-loving, fearless approach is probably best described as “freestyle”.
For us, operating a restaurant is a way to save the world. Dining together creates a perfect forum for conversation. Conversation is the life-blood of relationship. Relationships are the brick and mortar of community… and Bethany’s Table is all about community. We prefer to serve meals on platters whenever possible. We host wine tasting dinners served at our large community tables where neighbors meet neighbors, pass the platter and engage in great conversations. We buy produce and meat from the farms that surround us. Click here to read about out Buy Local! Initiative. Our suppliers become our customers. We don’t like Tyson, so they don’t get any of the money we receive from our customers. We eschew the corn spewed from the agribusiness monsters that defile our planet as well as our grocery shelves. Hence, the meals we serve are free of ingredients such as high fructose corn syrup. These commitments to “be in the world what you want to see in the world” contribute to an environment imbued with warmth and true hospitality.
Washington County is something of a culinary desert. We realize that a large segment of its population feels well-served by the more conventional and formulaic approach to restaurateuring that is typical to the area. The press of juggling the demands of over-full careers and pressing family life seems to funnel people into the quick-fix meal solutions that keep the likes of Subway, Burgerville and Applebees in business. But one individual and one family at a time folks discover the respite and comfort that we offer at Bethany’s Table. They come alone, or with their partners or their family and friends. They enjoy top-notch food and hospitality. They become customers for life. It is a real pleasure to be in the position to make these experiences possible for those who can appreciate them.
