Building A Bistro
The Ground Beneath Our Feet
Many of you know our story: how we took over the meal assembly business at this location and then transformed the space into a restaurant… almost. We are ready to do away with the last remnants of Dinners Ready. The reach-in in coolers in the dining room must go, the ceiling system is a disgrace and the lighting really needs a tune-up. We have already expanded the kitchen – though there is more work to do – and we have built two new toilet rooms in the expansion space but we have yet to figure out how to get there from here.It looks like we may have the opportunity to take over the remainder of the space next door. This would allow us to fulfill most of the ideas we had hoped to implement at The Table. We can build out a full bar in the main dining room, add a wine room and make room for special events, meetings and parties. If we act first to build out the new dining room we could close the existing seating area long enough to install the bar and make other upgrades. We feel ever so anxious to create an environment more conducive to a first-rate dining experience. It is not that we want to take the next step to so-called “fine dining” though we do aspire to hit the marks that connote premium service. But Bethany’s Table is a bistro - a freestyle bistro at that. We want your meal to be special, but it doesn’t need to be precious. It is an everyday challenge to strike a balance in portion sizes so that your entree is hearty but it is possible to share and enjoy a salad, pantry board and dessert. We never wanted to be a special event place; we simply want to be your first choice for a great dinner. Installing a bar will send a clear message that it is okay to drop in for a small pate and a glass of wine or cocktail. By adding an intimate dining area we can still be that place you choose when you want a very special experience. Wish us luck. If all goes well, maybe we’ll even get a sign!
