November News

It has been a while since we sent out a full newsletter.

It’s not like there wasn’t anything happening, quite the contrary. It has been a challenging period transitioning from full-pandemic operations, to who-the-hell-knows operations. Let’s catch up.

We launched a new website on a different platform, changed email hosting and email marketing sites, redesigned our point of sale system and chart of accounts, and have agreed on the terms of a new lease to expand into the Cup & Cone space next door. What does all this have to do with creating and serving fine cuisine you ask? Not much…

What’s next

Janet and I started this restaurant in early 2009 with $15,000 in credit on one card. All the other accounts had been maxed out and all the cash was gone. We didn’t have plates or serving ware, tables, chairs or cooking equipment. We installed a new bona fide cooking line in 2014 and executed a gut-remodel and expansion of the dining room in 2016. While it looks great, there are some real inefficiencies in operations and… we could really use a bar. It’s time to make the move.

Currently, with the seasonal loss of outdoor seating, I find myself glaring at the Marketplace footprint in what was once the wine bar with 16 additional seats. Our short-term plan is to bulge into the space next door by cutting an opening in the front and back, to create a temporary Marketplace and reclaim the wine bar. We are underway on design development of the new incarnation and will use that for a roadmap for additional interim improvements as we wend our way into next year. If all goes well we will close for a spell next September and blast out a major remodel.  Wish us luck!

Janet and I are wrapping up our time in Walla Walla, so I have finally completed the application to enable short-term rentals of the property and we are making it available for our customers. Click here to view the Walla Walla page and sign up calendar. Janet wrote an article explaining her love of the town titled “Double Trouble in Walla Walla”. My article is a little more esoteric and maybe less fun to read, but it explains the attraction for an old white guy reasonably likely to be run right out of the City of Roses. Learn for yourself what makes this place so special. Come be our guests.
