A Restaurant Reality Opportunity!

When the ground is moving beneath one’s feet they should not procrastinate on sending updates. I have written a few, now passé, Restaurant Reality progress reports. Let’s see if I can get this one fired off before it becomes irrelevant.

In describing the challenges of full-service, top-cuisine restaurateurship, I have broken the dilemma into cash – the king of which has lost its crown; cash flow – the underlying shortage of which has a number of causes; and business sustainability – how to put the necessary icing on a pretty good business. 

It cost us a lot to survive the pandemic with an intact staff and it cost us more to remodel the restaurant and build the Marketplace during a time of high uncertainty and skyrocketing inflation. We missed the mark with the Marketplace and closing was a severe setback… and there the space sat, longing for a purpose.

Announcing Radii Pi!

If you’ve been following my Restaurant Reality Series you know that we are excited to announce the arrival of pizza!

Not just any pizza: Artisan, Neapolitan-style, good-as-it-gets pizza!

Simply to fulfill a notion I’ve been harboring for several years, we are calling it Radii Pi. Topflight, artisan, 12-inch Neapolitan pies on the go, made with the finest, quality, local ingredients, available for delivery and slices out the door. Pasta? We’ll have a few. As well as salads, sweets, beer, wine and cocktails. 

The Wood Stone Mt Adams 5’ oven stands on the back porch while gas and electricity are being installed this week. Our recent wine cellar liquidation charged our coffers and cleared some space for building out the pizza shop. Janet’s son Ryan has been making all of our bread and pasta for some time and he has been appointed “Pi Pizza Boss.” Cassady, an accomplished chef and Janet’s long-time leader on the line, is sliding over to focus on supporting Ryan.

We will use only the finest ingredients, the best Italian flour and tomatoes, fresh sauces and creative toppings. We are leaning into the love of our customers, Janet’s reputation, the fact that rent and utilities are already being paid… and a glaring need in the neighborhood! We will poke our heads out with some pizza tastings and focus groups in September and launch Radii Pi in early October.

Pizza Shop New To Town Seeks Meaningful Relationships

Almost 20 people responded to my last pre-announcement and I shared an early draft of the business plan. Those ensuing conversations shaped the investment proposal that will fund Radii Pi. Our investors are drawn exclusively from beloved customers and friends like you – the people in our circle. We have launched development of Radii Pi by rubbing nickels together and selling wine. Quiet conversations have brought commitments of 40-50% of our target.

Investment Partners will have a lot of fun as well as free pizza! Especially in September when we’ll need excuses to make pizza and try out new recipes. For our Investment Partners, we’ll host a 5-course wine-paired dinner to celebrate the kickoff of Radii Pi. Our Partners will also get at least one free pizza every month. Later, payments on the loan accruing 6% interest can be drawn early from an account used to pay for meals at Bethany’s Table. The annual Investment Partners dinners will fill the room with great people whose company you are certain to enjoy.

Of course, anybody with the wherewithal to consider this investment knows that it is an unorthodox, unsecured investment in a restaurant on the corner, and is not to be made with money that matters to your family’s wellbeing. However, if you have it to spare and want to join us, Janet and I are a promise for a successful adventure. We are going to have a lot of fun with this, and all in all the investment offers a pretty great return.
