Yogurt Anybody?
Things moved very quickly last month in the “Janet’s Irish Pub” department. Just when we got our plans into final form and were meeting contractors we bumped up against a fellow with the intention of opening a “serve yourself frozen yogurt” shop. He stepped up and made an offer to lease the space next door. So, for now, it appears that “the next big thing” will be yogurt, and not “Janet’s Irish Pub”.One of my life’s guiding philosophies is that it is very difficult to make lemonade without lemons. Frankly, doubling the size of the business by adding on a pub was such a quantum shift in the scale of our operations that we became very much attracted to the idea of putting the features of the pub under the umbrella of our current space. Thinking that we might be able to secure some of the space next door to expand our current space, we came up with various plans to add a bar and a mezzanine to the current dining room and grow the kitchen. Well, to make a long story short: talk’s cheap, whiskey cost money.The process of trying to find a way to expand the business has been very consuming, and very rewarding in its own right. It required us to scrutinize our current approach and to dig deeper to understand our customer’s criteria for choosing us. The disappointment in not being able to expand is offset by the relief we feel being excused from this major undertaking. We have implemented a number of changes based on the insights we gained over the last few months. We believe that the business will work better for all of us.On a final note: Folks often look for a bad guy to use as a focal point for a disappointing result or experience. It would be an error to do so in this case. We have great confidence that everything will make sense to us in hindsight and that our angels had a hand in producing this outcome. That being said, we are especially appreciative of the support we received from our landlord, Roy Kim of Central Bethany Development.
